Die ben\u00f6tigte Fischmenge h\u00e4ngt von der Gr\u00f6\u00dfe des Gef\u00e4\u00dfes ab. <\/p>\n\n<p>Wir haben etwa 1,5 kg Fisch f\u00fcr eine 2,5 kg Dose verwendet.<\/p>\n\n<p>Manche Leute s\u00e4ubern den Fisch vor dem Salzen, weil unreiner Fisch Bitterstoffe abgibt, aber die meisten Leute salzen unreinen Fisch. Anchovis sind problematisch, weil ihre Innereien schnell verderben, daher ist es ratsam, sie vor dem Salzen zu s\u00e4ubern. <\/p>\n\n<p>Den Fisch mit grobem Salz bestreuen und einige Stunden ziehen lassen, um \u00fcbersch\u00fcssiges Wasser zu entfernen. Vor dem Salzen den Fisch mit K\u00fcchenpapier abtrocknen. <\/p>\n\n<p>Eine Schicht grobes Salz auf den Boden der Pfanne geben und damit beginnen, den Fisch mit dem Kopf nach unten darauf zu legen, wobei darauf zu achten ist, dass jede Schicht so flach wie m\u00f6glich ist. Wenn eine Schicht fertig ist, mehr grobes Salz dar\u00fcber streuen, die Pfanne um 90\u00b0 drehen (ein Viertelkreis) und mit einer neuen Reihe beginnen. Nach jeder Reihe die gesamte Mischung mit dem Deckel nach unten dr\u00fccken, um sie zu verdichten.  <\/p>\n\n<p>Das Salzen mit einer Schicht groben Salzes abschlie\u00dfen, sodass der Fisch vollst\u00e4ndig bedeckt ist. Schlie\u00dflich das Ganze mit einem Holzdeckel abdecken, auf den ein Gewicht, vorzugsweise ein Stein aus dem Meer, gelegt wird. Das Gewicht (ein Stein oder ein mit Sand gef\u00fclltes Gef\u00e4\u00df) sollte anfangs etwa so schwer sein wie der Fisch. Nach dem Wechsel der Salzlake wird das Gewicht auf die H\u00e4lfte des Fischgewichts reduziert.  <\/p>\n\n<p>Die Salzlake muss zum ersten Mal nach zehn Tagen gewechselt werden, wenn sich das Salz aufgel\u00f6st hat und die Fl\u00fcssigkeit braun geworden ist.<\/p>\n\n<p>Die braune Fl\u00fcssigkeit abgie\u00dfen und durch eine neue Lake aus 1 Liter Wasser und 150 g Salz ersetzen. Das Salz in das kochende Wasser geben. Die Qualit\u00e4t der Salzlake kann \u00fcberpr\u00fcft werden, indem eine kleine Kartoffel geputzt und in die Fl\u00fcssigkeit gelegt wird. Wenn die Kartoffel untergeht, mehr Salz hinzuf\u00fcgen und wenn sie an der Oberfl\u00e4che schwimmt, ist die Mischung gut. Anstelle der Kartoffel kann auch ein frisches Ei verwendet werden.   <\/p>\n\n<p>Beim Einsalzen die Fl\u00fcssigkeit zwei- bis dreimal wechseln, bis sie klar (gelblich) ist.<\/p>\n\n<p>Bei jedem Fl\u00fcssigkeitswechsel den Holzdeckel waschen und den Innenrand des Beh\u00e4lters reinigen.<\/p>\n\n<p>Den Beh\u00e4lter mit dem gesalzenen Fisch an einem dunklen und k\u00fchlen Ort aufbewahren. Die Dauer des Einsalzens h\u00e4ngt von den \u00e4u\u00dferen Bedingungen ab. Bei warmen Temperaturen dauert das Salzen k\u00fcrzer. Bis zur ersten Verkostung dauert es mindestens drei Monate.  <\/p>\n\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped wp-block-gallery-1 is-layout-flex
