I pesci preparati in questo modo potevano durare di pi\u00f9 e garantire un pasto per gli equipaggi delle navi. Questa ricetta trova le sue radici in un passato molto lontano. Anche il cuoco dell\u2019Antichit\u00e0 Apicio sapeva che il pesce fritto poteva essere conservato pi\u00f9 a lungo e nel suo ricettario risalente al I sec., <em>De Re Coquinaria<\/em>, annot\u00f2 la ricetta di un pesce che, non appena fritto, risultava pi\u00f9 buono se cosparso di aceto caldo. La prima ricetta completa delle sarde o alici in saor \u00e8 apparsa nel <em>Libro per cuoco<\/em>, pubblicato dall&#8217;<em>Anonimo Veneziano<\/em> nel XIV sec.     <\/p>\n\n<p>A Umago, il saor veniva tradizionalmente preparato secondo la ricetta pi\u00f9 semplice: pesce fritto, cipolla, olio di oliva, vino, aceto e spezie (<em>rosmarino, alloro<\/em> e <em>Mentha x piperita<\/em>). Infarinate il pesce e friggete fino a quando sar\u00e0 ben dorato. Quando \u00e8 fritto, scolate il pesce su carta assorbente e adagiate in un contenitore.  <\/p>\n\n<p>Scaldate l\u2019olio e unite le cipolle affettate. Quando ammorbidiscono aggiungete il pangrattato, 1 dl di acqua e 1 dl di aceto, un rametto di rosmarino, aggiungete il sale e il pepe e cuocete a fuoco lento per circa 10 minuti. <\/p>\n\n<p>Versate la marinata appena preparata e ancora calda sul pesce. Quando diventa freddo mettete a riposare in frigo per una notte. Il pesce al saor pu\u00f2 essere conservato in frigorifero per 7 giorni. \u00c8 famoso il detto: \u201cIl saor, pi\u00f9 riposa, meglio \u00e8\u201d.  <\/p>\n\n<h5 class=\"wp-block-heading\"><strong>Consiglio:<\/strong><\/h5>\n\n<p>Potete aggiungere anche un po\u2019 di zucchero al saor.<\/p>\n\n<p>Un\u2019ulteriore possibilit\u00e0 \u00e8 mettere il pesce nel saor e farlo cuocere per altri 5 minuti. <\/p>\n\n<p>La cipolla, l&#8217;aglio e le erbe aromatiche si soffriggevano tradizionalmente nell\u2019olio di frittura del pesce, per preservare tutti i sapori, ma oggi \u00e8 abitudine buttare l&#8217;olio di frittura e usare dell\u2019olio nuovo.<\/p>\n\n<p>Si pu\u00f2 usare anche la cipolla fresca tagliata a fette \u2013 non soffritta! \u2013 e cospargerla sul pesce che sar\u00e0 poi ricoperto con la marinata. La quantit\u00e0 di cipolla da usare dipende dai gusti. Accanto alla cipolla, si pu\u00f2 soffriggere anche l\u2019aglio.   <\/p>\n\n<p>* Si possono usare il rosmarino o qualche foglia di alloro. A Umago \u00e8 diffuso anche l\u2019uso della cosiddetta \u201c<em>erba de pesse<\/em>\u201d (Melissa officinalis).
