La quantit\u00e0 di pesce di cui avrete bisogno dipender\u00e0 dalle dimensioni del barattolo a disposizione. <\/p>\n\n<p>Per un barattolo di latta da 2,5 kg abbiamo utilizzato ca. 1,5 kg di pesce.<\/p>\n\n<p>La maggior parte delle persone sala il pesce senza pulirlo, ma alcuni preferiscono pulirlo prima di salarlo perch\u00e9 il pesce non pulito rilascia un sapore amaro. Le acciughe sono particolari da questo punto di vista perch\u00e9 le loro interiora si deteriorano facilmente, quindi si consiglia di pulirle prima di salarle. <\/p>\n\n<p>Versate il sale grosso sul pesce e lasciate riposare per qualche ora per far fuoriuscire l&#8217;acqua in eccesso. Prima della salatura, bisogna asciugare il pesce con la carta da cucina. <\/p>\n\n<p>Mettete uno strato di sale grosso sul fondo del barattolo e iniziate a disporre il pesce, ordinatamente testa contro coda. Ogni strato deve essere il pi\u00f9 piatto possibile. Dopo aver terminato il primo strato, aggiungete un altro strato di sale grosso, ruotate il barattolo di 90\u00b0 (un quarto di cerchio) e iniziate a disporre un altro strato di pesce. Dopo aver terminato alcuni strati, fate pressione sul composto con un coperchio, per rendere tutto pi\u00f9 compatto.  <\/p>\n\n<p>La salatura termina con uno strato di sale grosso che deve ricoprire completamente il pesce. Alla fine, coprite tutto con un coperchio di legno sul quale avrete messo un peso, possibilmente un sasso di mare. All\u2019inizio, il peso (un sasso o un contenitore pieno di sabbia) dovr\u00e0 pesare all\u2019incirca quanto il pesce. Dopo la sostituzione della salamoia, il peso va ridotto a 1\/2 di quello del pesce.  <\/p>\n\n<p>Trascorsi 10 giorni, quando il sale si scioglie e il liquido diventa marrone, bisogna sostituire la salamoia.<\/p>\n\n<p>Eliminate il liquido marrone e sostituitelo con della salamoia nuova, composta da 1 l di acqua e 150 g di sale. Fate bollire dell\u2019acqua e aggiungete il sale, lasciatela raffreddare e versatela nel contenitore con il pesce. Versatene una quantit\u00e0 tale da coprire anche il coperchio. Potete verificare la qualit\u00e0 della salamoia immergendo una patata nel liquido. Se la patata affonda bisogna aggiungere altro sale, se resta a galla la miscela \u00e8 buona. Al posto della patata potete usare un uovo fresco.   <\/p>\n\n<p>Il liquido deve essere sostituito 2-3 volte durante la salatura, fino a quando diventa chiaro (giallognolo).<\/p>\n\n<p>A ogni sostituzione del liquido, bisogna lavare il coperchio di legno e pulire il bordo interno del barattolo.<\/p>\n\n<p>Conservate il barattolo con il pesce salato in un luogo fresco e buio. La durata del processo di salatura dipender\u00e0 dalle condizioni esterne. Se fa caldo, la salatura richieder\u00e0 meno tempo. Per il primo assaggio bisogner\u00e0 aspettare almeno tre mesi.  <\/p>\n\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped wp-block-gallery-1 is-layout-flex
